Kannur: Corn sellers are a common sight on roadsides in many places in the state. With the arrival of huge quantity of corns from other states, more people have started selling corns. People who have lost jobs during the COVID crisis and college students who only have online classes also have ventured into this field for a living.
One cob of corn is sold for Rs 20. Corn is brought on large scale to Kannur and Kasaragod from Bengaluru and Mysuru. Since the markets in North India and abroad are affected due to COVID restrictions, corn is sent to the market in Kerala.
Compared to South India, corn is more popular in North India. Major producer of corn in global level is America. In India, corn is cultivated in Tamil Nadu, Uttar Pradesh, Bengal and Haryana.
There are mainly two varieties of corn, sweet corn and field corn. Sweet corn is used to make soup while field corn is used for frying. Many people buy corns to make fried corns, which is a common item in food stalls, the vendors said.
A rich source of anti-oxidants, corn is good to treat heart diseases, aneamia, obesity and blood pressure. Apart from soup, corn is also used for making salad, upma and other types of dishes.
Fried corn
First, corn is steam-cooked and then pierce it with an iron rod and fry all sides. After it is fried well, a spicy solution prepared already will be smeared on it.
The solution is prepared by mixing 1 tablespoon of chilli powder, a pinch of salt and 1.5 tablespoon of lime essence. Butter and pepper also can be used for a different taste.
