One of my favorite parts of late summer is the sweet corn. I love, love, love corn, through the whole year but I am especially partial to fresh sweet corn.
I love trying different farm stands in the county and we certainly have several to choose from in Stephenson County. My favorite way to have sweet corn is plain; my opinion has always been "good sweet corn doesn’t need butter or salt/pepper." I could eat ears of sweet corn for days on end. But I also like trying new recipes. I’ve included one below that I am hoping to try soon. Do you have a favorite fresh vegetable recipe? If so, I’d love to share it with our members. Ingredients:
6 ears sweet corn, husked
1/3 Cup crema
4 Tablespoons lime juice (fresh is best)
1/2 teaspoon ground cumin
3/4 teaspoons smoked paprika
1/2 teaspoon chili powder
1/4 teaspoon black pepper
1/4 teaspoon salt , plus more to taste
1/2 cup cheese crumbled Cotija
1/2 onion red , minced
1/3-1/2 bunch cilantro , chopped
Instructions:
Heat grill to medium heat. Add the corn, turning occasionally until slightly charred on each side.
Remove from the grill and allow to cool for a few minutes.
Holding the corn by the small end, cut off all of the kernels.
Place the kernels in a big bowl and add all remaining ingredients.
Fold gently with a rubber spatula, seasoning with additional salt as needed.
Serve slightly warm, room temperature or cold.
Scholarship recipients announced: The Stephenson County Farm Bureau Foundation is excited to announce the recipients of this year’s scholarships. Our general scholarships of $500 were awarded to each of the following individuals: Amanda Baldauf, Mackenzie Endress and Burgundy Barklow. Our agriculture studies recipients are Abigayle Endress, Gwen Heimerdinger, Taylor Swanson, Jazmin Winger and Nicole Moest. They each received $750. These scholarships are made possible by our Stephenson County Farm Bureau members who generously donate to the foundation. Dairy pricing presentation: The Stephenson County Farm Bureau will be hosting a Dairy Pricing Seminar at 1 p.m. Aug. 25. John Newton with American Farm Bureau Federation will discuss the pricing of dairy products. This will be a virtual presentation and can be viewed from a location of your choosing. Room rentals: Are you looking for somewhere to host your next family get together? The Stephenson County Farm Bureau has several meeting rooms available for rentals. Room rates begin at $70. Farm Bureau members also receive a $10-$20 discount on room rentals. To inquire about room availability or room rental costs contact 815-232-3186. Rentals are subject to local health department guidelines.
Prep, Freeze, Cook order forms now available: The Conservation and Agriculture Partners are working on their next Prep, Freeze, Cook fundraiser that will benefit Ag in the Classroom in Stephenson County. Orders will be due on Aug. 21 and will be ready for pick up Sept. 2. Pick up will be done drive-thru style, allowing those who have purchased to remain in their car. Order forms can be found on our website stephensoncfb.org or on the Stephenson County Ag in the Classroom Facebook page. To place an order, you can print the form and mail a check or call the Stephenson County Farm Bureau at 815-232-3186 to place your order over the phone. Meals include barbecue pulled pork, cheesy chicken potatoes, Parmesan honey pork roast, ham breakfast casserole, party meatballs, taco casserole, ranch pork roast, chicken pot pie, honey barbecue chicken tenders and blue cheese bacon burgers. You may choose from two options. Option 1: Each entrée will serve 5 people for $170 or Option 2: Each entrée will serve 2 people for $85. Each option includes 10 meals.
