
It's sweet corn season and in case you may be bored of eating your sweet corn straight from the cob, there are a few ways to spruce it up.
Sweet corn salad doesn't even require you to cook the sweet corn. Simply cut the kernels from from the cob, pick a few other things from the garden to throw in and you'll about be set.
Here's what you'll need:
4 c. fresh or frozen corn, defrosted and cut off the cob
1 c. cherry tomatoes, halved
1/3 c. crumbled feta
1/4 red onion, finely chopped
1/4 c. basil, thinly sliced
3 tbsp. extra-virgin olive oil
Juice of 1 lime
Kosher salt
Freshly ground black pepper
Toss all ingredients together in a large bowl, then season with salt and pepper.
Grilled sweet corn is also delicious.
Preheat grill to high and heat for about 10 minutes. Add corn and cook, turning often, until charred all over, about 10 minutes.
Spread butter over warm corn and season with salt or try sprinkling grated Parmesan cheese.
